Did you know a vegetable shoot-out was held in 1992 to find out which vegetable was the healthiest? After the Bunsen burners were put out and the smoke cleared, it was the sweet potato that ranked highest in nutritional value. Of course, with its complex carbs, fiber, beta-carotene, and vitamins C and B, we would have put our money on the sweet potato all along.
